Butternut Squash, Sweet Potato and Turkey Mash

Ingredients:
1 Large Red Bell Pepper
.5 lb. butternut squash
1 large sweet potato
8 oz mushrooms
1 lb. ground beef or ground turkey
2 teaspoons ground cumin
2 teaspoons ground coriander
2 teaspoons garlic powder
1 teaspoon ground cinnamon
salt
pepper
1 tbsp olive oil
Directions:
- Peel the butternut squash & clean potatoes well
- Chop all vegetables to 1/2″ cubes and cut pepper in equivalent size pieces
- Add olive oil to skillet and cook potato & squash on med-high for 10 min
- Add the seasoning to the vegetables and stir in good
- Add peppers & mushrooms to the vegetables and continue cooking until all are tender
- Brown the meat in a skillet, drain & combine with the vegetables
- Serve warm
